    Make the pastry cream first. In a medium saucepan, warm the milk with the strips of lemon zest over medium heat until it just begins to steam, then take it off the heat and let it sit 10 minutes to infuse. Fish out and discard the zest strips.

    Heat the oven to 350°F. Butter a 9-inch tart pan or springform pan. Roll the larger disk between two sheets of parchment into a 12-inch round and fit it into the pan, pressing it up the sides; patch any tears with your fingers. Trim the edge level with the rim.

    Whisk the cold pastry cream smooth and spread it evenly in the shell. Roll the smaller disk into a 9 1/2-inch round and lay it over the filling. Press the edges together to seal and trim off any overhang.
