    Start the jasmine rice first so it's ready when the stir-fry is done. In a small bowl, stir together the oyster sauce, fish sauce, soy sauce, brown sugar and water until the sugar dissolves, then set it next to the stove.

Lift onto a plate and repeat with the remaining 2 eggs. Pour off all but about 1 tbsp of the oil.
