    soy sauce

  • 3 tbsp

    mirin

  • 1 1/2 tbsp

    honey

  • 1 tsp

    toasted sesame oil

    garlic, finely grated

For the salmon and asparagus

    skin-on salmon fillets (about 6 oz each), patted very dry

    asparagus, woody ends trimmed

    Stir the soy sauce, mirin, honey, sesame oil, garlic and ginger together in a small bowl until the honey dissolves. Set it near the stove.

    Heat a large heavy skillet (cast iron or stainless, 12-inch) over medium-high heat until hot, about 2 minutes. Add the asparagus in a single layer and cook without stirring for 2 minutes, until charred in spots, then toss and cook 2 minutes more, until just tender with a little bite. Move to a platter and keep warm.

    Add the remaining 1 tbsp oil to the same skillet over medium-high heat. Lay the salmon in skin-side down, pressing each fillet flat with a spatula for a few seconds so the skin makes full contact. Cook undisturbed for 5 to 6 minutes, until the skin is crisp and the flesh has turned opaque most of the way up the sides.
