For the pork

    pork tenderloins (about 1 lb each), trimmed of silverskin

For the marinade and glaze

  • 1/3 cup

    hoisin sauce

  • 3 tbsp

    soy sauce

  • 3 tbsp

    honey

  • 2 tbsp

    Shaoxing wine or dry sherry

  • 1 tbsp

    toasted sesame oil

  • 1 tsp

    Chinese five-spice powder

  • 4 cloves

    garlic, finely grated

  • 1 tbsp

    fresh ginger, finely grated

  • 1/4 tsp

    white pepper

  • 2 tbsp

    honey, for basting

For the scallion rice

  • 1 1/2 cups

    jasmine rice, rinsed until the water runs clear

  • 2 1/4 cups

    water

  • 1/2 tsp

    salt

  • 1 tbsp

    unsalted butter or neutral oil

    While the pork roasts, make the rice: combine the rinsed rice, water and salt in a saucepan. Bring to a boil over high heat, then cover, turn the heat to low and cook 15 minutes. Take it off the heat and leave it covered for 10 minutes more.

    Melt the butter in a small skillet over medium heat, add the scallion whites and cook until softened and fragrant, about 1 minute. Fluff the rice with a fork, then fold in the scallion butter and most of the scallion greens.
