    Fill a large pot or container with water, clip in the sous vide cooker and set it to 145°F (63°C). Let it come up to temperature.

    Gently lower the eggs, still in their shells, into the water with a slotted spoon. Cook for 1 hour. They'll be set and custardy, with a loose, jammy yolk.

    While the eggs cook, heat the butter and 1 tbsp olive oil in a large skillet over medium-high heat. When the butter stops foaming, add the mushrooms in an even layer. Leave them alone for 4 minutes to brown, then stir and cook another 5–6 minutes, until deeply golden and any liquid has cooked off.

    Turn the heat to medium and add the sliced garlic and thyme leaves. Cook, stirring, for 1 minute, just until the garlic smells sweet and is pale gold — don't let it brown.
