For the turkey

For the gravy

  • 4 tbsp

    unsalted butter

    all-purpose flour

    Arrange the wings skin side up in a single layer in a 9x13-inch baking dish or roasting pan. Roast uncovered until the skin is browned, about 45 minutes. Remove and set aside; leave the oven on and turn it down to 325°F.

    While the wings roast, make the gravy. Melt the butter in a large skillet or Dutch oven over medium heat. Whisk in the flour and cook, whisking almost constantly, until the roux smells nutty and turns the color of peanut butter, 6 to 8 minutes. Don't let it scorch.

    Let the dish rest 10 minutes. Discard the bay leaves, skim off any excess fat from the surface, and stir the gravy. Scatter the green onions over the top and serve the wings and plenty of gravy over rice or mashed potatoes.
