    Cut the potatoes into 3/4-inch cubes and the cauliflower into bite-size florets. Chop the onion and tomatoes, and mince the ginger and garlic.

    Heat the oil in a large skillet over medium-high heat. Add the cumin seeds and let them sizzle for about 20 seconds, until fragrant.
