For the pork

    pork tenderloin (2 tenderloins), trimmed of silverskin

  • 2 tbsp

    black peppercorns, coarsely cracked

  • 1 tbsp

    brined green peppercorns, drained, patted dry and lightly crushed

    neutral oil, such as canola

  • 1 tbsp

    unsalted butter

For the sauce

    small shallot, finely minced

  • 1/3 cup

    brandy or Cognac

  • 1/2 cup

    low-sodium chicken broth

  • 3/4 cup

    heavy cream

  • 1 tbsp

    brined green peppercorns, drained

    Dijon mustard

For the mashed potatoes

  • 2 lb

    Yukon Gold potatoes, peeled and cut into 2-inch chunks

    Put the potatoes in a large pot, cover with cold water by an inch, and add a generous spoonful of salt. Bring to a boil over high heat, then lower to a steady simmer and cook until a knife slides into a chunk with no resistance, 15 to 18 minutes. Drain well and leave in the colander.
