Worked out from the ingredients.

Steps

  1. Step 1

Put the steak in the freezer for 10 minutes while you prep (this makes it much easier to slice), then slice it against the grain as thin as you can, about 1/8 inch. Pat the slices dry and season with 1/2 tsp of the salt and the black pepper.

    10 min

    • 1 1/2 lb sirloin steak
    • 1/2 tsp salt
    • 1/2 tsp black pepper
  2. Step 2

Heat the oven to 400°F. Butter the cut sides of the hoagie rolls, set them cut side up on a baking sheet, and toast until golden at the edges, 5 to 6 minutes. Leave the oven on.

    6 min · 400°F

    • 4 hoagie rolls
    • 2 tbsp butter
  3. Step 3

Heat 1 tbsp of the oil in a large skillet over medium-high heat. Add the onion and bell peppers with the remaining 1/2 tsp salt and cook, stirring now and then, until softened and lightly browned, 6 to 7 minutes. Scrape them onto a plate.

    7 min

    • 1 tbsp vegetable oil
    • 1 large yellow onion
    • 2 green bell peppers
    • 1/2 tsp salt
  4. Step 4

Turn the heat to high and add the remaining 1 tbsp oil. When it shimmers, add the steak in a single layer and let it sit untouched for 1 minute to sear, then stir and cook just until no longer pink, 2 to 3 minutes total. Don't crowd it: if the pan is small, do this in two batches.

    3 min

    • 1 1/2 lb sirloin steak
    • 1 tbsp vegetable oil
  5. Step 5

Return the peppers and onions to the skillet, add the Worcestershire sauce, and toss together. Divide the mixture into 4 piles in the pan, lay 2 slices of provolone over each pile, turn off the heat, and cover for 1 to 2 minutes until the cheese melts.

    2 min

    • 1 tbsp Worcestershire sauce
    • 8 slices provolone cheese
  6. Step 6

Scoop each cheese-covered pile into a toasted roll with a spatula. Serve right away.
