For the succotash

    thick-cut bacon, cut crosswise into 1/4-inch strips

    Pull the scallops out of the fridge, peel off the small tough side muscle if it's still attached, and lay them on a plate lined with paper towels. Pat the tops dry too and leave them uncovered on the counter while you make the succotash — dry scallops are what gives you a good crust.

    Put the bacon in a large (12-inch) skillet over medium heat. Cook, stirring now and then, until the fat has rendered and the bacon is crisp, 6 to 8 minutes. Lift the bacon out with a slotted spoon onto a paper towel, leaving the fat behind. Pour off all but about 1 tablespoon of the fat.

    Raise the heat to medium-high and add the bell pepper and the scallion whites. Cook, stirring, until the pepper is just tender, about 3 minutes. Add the corn and cook, stirring occasionally, until it is hot and lightly browned in spots, about 4 minutes more. Stir in the garlic and cook 30 seconds.
