    Shuck the oysters: fold a kitchen towel into a thick pad and set an oyster on it, cupped (deeper) side down, hinge, the pointed end, facing you. Hold it down firmly through the towel, or wrap the towel over your hand. Work the tip of an oyster knife into the hinge and wiggle it with firm pressure, twisting as if turning a key, until you feel the shell pop. Do not stab or force it with a straight push.

    With the shell popped, slide the knife along the inside of the top shell, keeping the blade pressed up against it, to cut the muscle holding the two halves together, then lift off and discard the top shell. Run the knife under the oyster to free it from the bottom shell, keeping the shell level so the liquor stays in. Pick out any shell chips; do not rinse the oyster. Nestle it on the ice and repeat with the rest.

    Set the three mignonettes in their bowls on the platter with small spoons, add lemon wedges, and serve right away while everything is icy. Spoon about 1/2 teaspoon of mignonette over each oyster just before eating.
