For the pork

  • 4 lb

    boneless pork shoulder (Boston butt), trimmed of thick outer fat

    green cabbage, finely shredded (about 1 small head)

    Heat the oven to 300°F. Pat the pork dry with paper towels.

    Pull the pork apart with two forks, discarding any big lumps of fat. Toss the meat with 1 cup of the barbecue sauce and about 1/2 cup of the reserved pan juices, enough to make it glossy and moist. Taste and add more salt if it needs it.
