    Make the marinade: in a small saucepan, whisk together the white miso, sake, mirin and sugar. Set over medium-low heat and cook, whisking, for 3 to 4 minutes, just until the sugar dissolves and the mixture is smooth and glossy. Don't let it boil. Cool completely to room temperature.
