    Pat the grouper dry and cut into 2-inch chunks. Toss with the 1/2 tsp turmeric and 1/2 tsp salt and set aside in the fridge while you make the curry.

    Start the rice: combine the rinsed basmati, water and salt in a saucepan. Bring to a boil, then cover, turn the heat to low and cook 12 minutes. Take off the heat and leave covered until serving, then fluff with a fork.

    Heat the coconut oil in a wide, deep skillet or shallow pot over medium heat. Add the mustard seeds and fenugreek seeds and cook until the mustard seeds pop, about 30 seconds. Add the curry leaves (stand back, they spatter) and stir for 10 seconds.

    Add the sliced onion and cook, stirring, until soft and translucent but not browned, 6 to 8 minutes. Stir in the ginger, garlic and green chilies and cook 2 minutes more, until fragrant.

    Sprinkle in the 3/4 tsp turmeric and stir for 30 seconds. Add the tomato wedges, the coconut milk, water and 1 tsp salt. Bring to a bare simmer — small bubbles only, never a rolling boil, or the coconut milk will split. Simmer gently 5 minutes to let the gravy come together.
