    425°F

  2. Step 2

On the sheet pan, toss the halved potatoes and fennel wedges with 3 tbsp of the olive oil, the oregano, the sliced garlic, the zest of 1 lemon, 1 tsp salt and several grinds of pepper. Spread everything into a single layer, cut sides down.

    • 3 tbsp olive oil
    • 2 tsp dried oregano
    • 4 cloves garlic
    • 1 lemons
    • kosher salt
    • black pepper
  3. Step 3

  4. Step 4

While the vegetables roast, rub the swordfish steaks all over with 1 tbsp of the olive oil and season both sides well with salt and pepper.

    5 min

    • 1 tbsp olive oil
    • kosher salt
    • black pepper
    • 4 swordfish steaks (about 6 oz each, 1 inch thick)
  5. Step 5

Pull out the pan. Push the vegetables to the edges and nestle the swordfish steaks in the middle. Scatter the cherry tomatoes and olives around the fish and drizzle everything with the remaining 1 tbsp olive oil.

    • 1 tbsp olive oil
    • 4 swordfish steaks (about 6 oz each, 1 inch thick)
    • 1 pint cherry tomatoes
