    In a medium bowl, stir together the sour cream, mayonnaise, buttermilk, vinegar, garlic powder and black pepper until smooth. Add 3 oz of the blue cheese and stir just enough to break it into chunks, leaving plenty of lumps. Taste and add salt. Cover and refrigerate until serving, at least 20 minutes.

    Lay the bacon in a cold large skillet and cook over medium heat, turning now and then, until deep brown and crisp, 10 to 14 minutes. Move to a paper-towel-lined plate. When cool, crumble or chop into bite-size pieces.
