For the goulash

  • 2 1/2 lb

    boneless beef chuck, trimmed, cut into 1 1/2-inch cubes

    yellow onions, thinly sliced (about 6 medium)

    garlic, minced

  • 1 tbsp

    caraway seeds, lightly crushed

  • 1/4 cup

    sweet Hungarian paprika

  • 1 tsp

    hot paprika or cayenne (optional)

  • 2 tbsp

    tomato paste

    red bell peppers, seeded and cut into 1-inch pieces

    Pat the beef cubes dry and season them all over with salt and pepper.
