For the steak

  • 2 lb

    sirloin steak, patted dry and cut into 1-inch cubes

  • 1 tsp

    kosher salt

  • 1 tsp

    coarsely cracked black pepper

    toasted sesame oil

  • 2 cloves

    garlic, minced

    soy sauce

For the dipping sauce

  • 1/2

    sweet onion, roughly chopped

  • 2 tbsp

    fresh ginger, peeled and roughly chopped

  • 1/4 cup

    soy sauce

  • 3 tbsp

    rice vinegar

  • 1 tbsp

    sugar

  • 1 tsp

    toasted sesame oil

  • 2 tbsp

    water

    Make the dipping sauce first: combine the chopped onion, ginger, soy sauce, rice vinegar, sugar, sesame oil and water in a blender. Blend 30 to 45 seconds, until smooth and pale. Pour into a bowl and refrigerate while you cook the steak; it thickens slightly as it sits.

    • 3 tbsp rice vinegar
    • 1 tbsp sugar
    • 1 tsp toasted sesame oil

    Pat the steak cubes very dry with paper towels, then toss them with the salt and half the cracked pepper. Let them sit at room temperature while the pan heats.

    Heat a large cast-iron skillet or griddle over high heat until a drop of water sizzles away instantly, about 3 minutes. Add 1 tbsp of the sesame oil and the neutral oil, swirl, then add the onion pieces in a single layer. Cook, stirring once or twice, until charred in spots but still crisp, 2 to 3 minutes. Scrape the onion onto a plate.

    Add the remaining 1 tbsp sesame oil to the hot pan. Add half the steak in a single layer, with space between the cubes, and let it sit undisturbed until deeply browned, about 2 minutes. Toss and cook 1 minute more for medium-rare, then move to the onion plate. Repeat with the rest of the steak.

    Lower the heat to medium. Add the butter and garlic and cook 30 seconds, until the garlic smells sweet but is not browned. Stir in the soy sauce, then return the steak and onion to the pan and toss for 30 seconds to coat. Take off the heat and add the remaining cracked pepper.
