For the fondue

  • 1 clove

    garlic, peeled and halved

    Gruyère cheese, rind removed, coarsely grated

    Emmental cheese, rind removed, coarsely grated

    cornstarch

  • 1 cup

    dry white wine, such as Sauvignon Blanc

  • 1 tsp

    lemon juice

  • 1 tbsp

    kirsch (optional)

  • 1/4 tsp

    freshly grated nutmeg

  • black pepper, to taste

  • salt, to taste

For dipping

  • 1 lb

    baby potatoes, halved if larger than a walnut

    crusty bread loaf, such as a baguette or sourdough (about 1 lb), cut into 1-inch cubes

    Put the baby potatoes in a saucepan, cover with cold water by an inch and add a generous pinch of salt. Bring to a boil and cook until a knife slides in easily, 12 to 15 minutes. Drain and keep warm.
