For the trout

    Mash the softened butter with the chopped dill, parsley, lemon zest, lemon juice and a pinch of salt in a small bowl until evenly mixed. Set aside at room temperature (or refrigerate if your kitchen is warm).

    While the fish rests, grill the zucchini planks directly on the grates, 2 to 3 minutes per side, until marked and just tender.
