For the cucumber salad

    English cucumber, very thinly sliced

    white wine vinegar

    whole-grain mustard

    neutral oil

  • 3 tbsp

    fresh dill, finely chopped

  • salt and black pepper, to taste

For the salmon

    skin-on salmon fillets (about 6 oz each)

    Put the sliced cucumber and red onion in a medium bowl. In a small bowl, stir together the vinegar, water, sugar and salt until the sugar dissolves, then pour it over the vegetables and toss. Let sit at room temperature while you do everything else, tossing once or twice.

    Make the sauce: whisk the whole-grain mustard, Dijon, honey and vinegar together in a small bowl. Whisk in the oil a little at a time so it thickens, then stir in the dill and season with salt and pepper. Set aside.

    Heat the grill to medium-high (about 450°F) with the lid closed, about 10 minutes. Scrape the grates clean with a brush, then oil them well with a paper towel dipped in oil and held with tongs.

    Pat the salmon dry with paper towels. Rub all over with the olive oil and season with the salt and pepper.

    Place the fillets skin side up on the hot grates and grill, uncovered, until they release easily and have clear grill marks, 4 to 5 minutes. Flip with a thin spatula onto the skin side and grill 3 to 5 minutes more, until the thickest part flakes and reads 125°F to 130°F for just-cooked. Move to a platter.

    Let the salmon rest 3 minutes. Drain off most of the liquid from the cucumbers and stir in the dill. Spoon the mustard-dill sauce over the salmon and serve with the cucumber salad and lemon wedges.
