For the rice

    Put the rinsed rice, water and salt in a medium saucepan. Bring to a boil over high heat, then cover, turn the heat to low and cook for 15 minutes. Take it off the heat and leave it covered until you're ready to serve, then fluff with a fork.

    While the rice cooks, stir the soy sauce, honey, rice vinegar, cornstarch, 1/4 cup water and red pepper flakes together in a small bowl until the cornstarch dissolves. Set it near the stove with the prepped ginger, garlic and green beans — once you start, it moves fast.

    Heat 1 tbsp of the oil in a large skillet or wok over high heat until it shimmers. Add the green beans and a pinch of salt and cook, stirring only every 30 seconds or so, until they're blistered and browned in spots but still have snap, 4 to 5 minutes. Tip them onto a plate.

    Add the remaining 1 tbsp oil to the hot pan, then the ground pork. Press it into a flat layer and let it sear undisturbed until the underside is deeply browned, about 3 minutes. Break it into chunks and cook, stirring, until no pink remains, 3 to 4 minutes more.
