    Put the eggs in a single layer in a large saucepan and cover with cold water by about an inch. Bring to a boil over high heat, then turn off the heat, cover the pan, and let the eggs sit for 11 minutes.

    Drain the eggs and transfer them to a bowl of ice water. Let them cool for 10 minutes — this stops the cooking and makes them much easier to peel.

    Mash the yolks with a fork until crumbly, then add the mayonnaise, 2 tbsp finely chopped mango chutney, curry powder, lime juice and Dijon. Mash and stir until completely smooth, then season with salt and pepper to taste.
