For the dressing

  • 1/2 cup

    buttermilk

    mayonnaise

    Heat the oven to 400°F. Lay the bacon in a single layer on a foil-lined baking sheet and bake until deep golden and crisp, 18 to 22 minutes. Move to a paper-towel-lined plate, let cool, then chop or crumble into bite-size pieces.

    While the bacon bakes, bring a small saucepan of water to a boil. Lower the eggs in with a spoon and boil for exactly 7 minutes, then transfer to a bowl of cold water for 5 minutes. Peel and halve lengthwise; the yolks should be jammy.

    Put each chicken breast on a cutting board and slice it in half horizontally to make 4 thin cutlets. Pat dry and season all over with the kosher salt, pepper and garlic powder.

    Heat the olive oil in a large skillet over medium-high heat until it shimmers. Add the cutlets and cook, undisturbed, until well browned, 4 to 5 minutes. Flip and cook 3 to 4 minutes more, until the thickest part reads 165°F. Move to a plate and rest 5 minutes, then slice crosswise about 1/2 inch thick.

    While the chicken rests, make the dressing: in a bowl, whisk the buttermilk, mayonnaise, sour cream, vinegar and Dijon until smooth. Stir in the blue cheese and chives, mashing some of the cheese against the side of the bowl so it thickens the dressing. Season with salt and pepper.
