For the beef

    flank steak, sliced 1/4 inch thick across the grain

  • 1 tbsp

    Shaoxing wine (or dry sherry)

  • 2 tsp

    soy sauce

  • 1 tbsp

    cornstarch

  • 1 tsp

    toasted sesame oil

For the sauce

  • 2 tbsp

    fermented black beans (douchi), rinsed and lightly mashed

  • 5 cloves

    garlic, minced

  • 1 tbsp

    ginger, minced

  • 3/4 cup

    low-sodium chicken broth

  • 1 tbsp

    oyster sauce

  • 1 tbsp

    soy sauce

  • 1 tbsp

    Shaoxing wine (or dry sherry)

  • 1 tsp

    sugar

  • 1 tsp

    white peppercorns, coarsely cracked

  • 1 tbsp

    cornstarch, stirred into 2 tbsp cold water

For the stir-fry

    Combine the rinsed jasmine rice and water in a saucepan. Bring to a boil, then cover, turn the heat to low and cook 15 minutes. Turn off the heat and leave covered until you serve.
