    Stir the paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper and cayenne together in a small bowl. Set aside.

    Cook the bacon in a large skillet over medium heat until the fat has rendered and the pieces are crisp, 6–8 minutes. Lift the bacon out with a slotted spoon onto a plate, leaving the fat in the pan.

    Turn on your vent hood or open a window. Heat a cast-iron skillet over high heat until it is very hot, about 5 minutes, then add the oil and the remaining 1 tbsp butter. Lay in the swordfish and sear, without moving it, until the crust is dark and crusted, 3–4 minutes. Flip and cook 3–4 minutes more, until the fish is just opaque at the center (135°F). Rest 2 minutes.
