Worked out from the ingredients.

Steps

  1. Step 1

Trim the ends off the zucchini, cut each in half crosswise, then cut each half lengthwise into spears about 1/2 inch thick. Lay them on paper towels and pat the cut sides dry.

    10 min

    • the rest of the medium zucchini (about 1 1/2 lb total)
  2. Step 2

Set up three shallow bowls: flour in the first; eggs in the second, beaten well with a fork; and in the third, panko, Parmesan, oregano, garlic powder, salt and pepper, stirred together.

    5 min

    • 1/2 cup all-purpose flour
    • 2 large eggs
    • 1 cup panko breadcrumbs
    • 3/4 cup Parmesan cheese
    • 1 tsp dried oregano
    • 1/2 tsp garlic powder
    • 3/4 tsp fine salt
    • 1/4 tsp black pepper
  3. Step 3

Working with a few spears at a time, roll them in the flour and shake off the excess, dip in the egg and let the extra drip away, then press firmly into the panko-Parmesan so it sticks all over. Set the coated spears on a plate or tray.

    10 min

    • the rest of the medium zucchini (about 1 1/2 lb total)
    • 1/2 cup all-purpose flour
    • 2 large eggs
    • 1 cup panko breadcrumbs
  4. Step 4

Heat the air fryer to 400°F. While it heats, make the sauce: warm the olive oil in a small saucepan over medium heat, add the garlic and cook 30 seconds until fragrant but not browned.

    3 min · 400°F

    • 1 tbsp olive oil
    • 2 cloves garlic
  5. Step 5

Stir in the crushed tomatoes, oregano and sugar. Simmer gently, stirring now and then, until slightly thickened, about 12 minutes. Season with salt, stir in the basil, and keep warm over low heat.

    12 min, hands-off

    • 1 can crushed tomatoes (14.5 oz)
    • 1/2 tsp dried oregano
    • 1/4 tsp sugar
    • salt
    • 2 tbsp fresh basil
  6. Step 6

Arrange half the spears in the air-fryer basket in a single layer, not touching, and spray the tops lightly with olive oil spray. Air-fry at 400°F for 10 to 12 minutes, turning them once halfway, until deep golden and crisp and a spear gives easily when pressed.

    12 min · 400°F

    • 1/2 medium zucchini (about 1 1/2 lb total)
    • olive oil cooking spray
  7. Step 7

Air-fry the second batch the same way, then pile all the fries on a platter and serve right away with the warm marinara for dunking.

    12 min · 400°F

    • 1/2 medium zucchini (about 1 1/2 lb total)
