Steps

  1. Step 1

Heat the air fryer to 375°F. While it heats, toss the halved Brussels sprouts in a large bowl with the olive oil, salt and pepper until evenly coated.

    3 min · 375°F

    • 1 lb Brussels sprouts
    • 1 tbsp olive oil
    • 1/4 tsp kosher salt
    • 1/4 tsp black pepper
  2. Step 2

Add the chopped bacon to the bowl and toss again so it is scattered through the sprouts. Tip everything into the air-fryer basket and spread it into as close to a single layer as you can, with most of the sprouts cut-side down. If it looks crowded, cook in two batches.

    • 4 slices thick-cut bacon
  3. Step 3

Air-fry for 14 to 16 minutes, pulling out the basket and shaking it well every 5 minutes, until the sprouts are deep brown and frizzled at the edges and the bacon is crisp. Loose outer leaves will char — that's the good part.

  4. Step 4

While they cook, whisk the maple syrup, Dijon mustard, cider vinegar and red pepper flakes together in the large bowl you used earlier.

    2 min

    • 2 tbsp maple syrup
    • 1 tbsp Dijon mustard
    • 1 tbsp apple cider vinegar
    • 1 pinch red pepper flakes
  5. Step 5

Tip the hot sprouts and bacon straight into the bowl with the glaze and toss for about 30 seconds, until everything is coated and glossy. Taste, add a little more salt or vinegar if it needs it, and serve right away while they're crisp.
